RAVEのお茶はすべてオーガニックですか?

現在、私たちは原島さん、宮崎さん、益井さん、中井さんの4軒県の農家さんと提携しています。どの農園も自然農法を実践しており、植物由来の有機肥料のみを使用し、殺虫剤、殺虫剤、除草剤、その他の農薬は使用していません。

原島農園と宮崎農園はオーガニック認証を受けていますが、増井農園は受けていません。

したがって、増井農園のお茶には「オーガニック認証」マークは付いていませんが、事実上、無農薬・無化学肥料です。

お茶を淹れるのに最適な器具は何ですか?

The Basic equipment for brewing tea includes:
1. A teapot - or any kind of brewing vessel in which you combine water and tea leaves for extraction. Can be a clay pot, a glass pot, french press, gaiwan etc..
2. A serving pot or Chahai- this is for decanting brewed tea before pouring into individual cups. Any kind of water pitcher / carafe / even a thermos bottle will do!
3. Your favorite cup for sipping tea.
4. Scale - at the beginning of Your tea journey it might be a good idea to weight out the amount of tea leaves for the brew. With time You'll learn to tell how much tea is in the pot by just looking at it!

Does water affect the taste tea?

Brewing tea starts with selecting the right water, as its quality directly influences the tea’s taste and aroma. The best water to use for brewing tea is fresh, filtered, and soft water with a neutral pH (7-7.5). Hard water or water with strong mineral content can overshadow the tea's delicate flavours. So Your ideal water for brewing tea will depend on Your location. In most cities of Japan, tap water put through some filter (even a simple charcoal-based one) will be a good choice. If using mineral water, try to get the softest water. You can get (the one that contains as few minerals as possible). Don't forget that the right water will allow the tea’s unique characteristics to shine !

How do i store my tea?

Tea should be stored at room temperature in a dark place. 

It is very sensitive to a lot of things - oxygen, humidity, temperature. It can deteriorate very fast in hostile conditions, but it can also age beautifully and develop even better aroma & flavour over a couple of years if kept properly. 

Not only do our teas get packaged right at the farm to maximise freshness - we have chosen the best available bags to keep our teas fresh as long as possible. A seemingly simple bag consists of 6 layers centred around a sheet of aluminium, preventing any contact with outside atmosphere till it’s opened, and it also has a resealable zipper to keep the tea fresh after opening! But even our bags cannot withstand extended periods of high temperatures, so recommend avoiding storing the tea in direct sunlight. 

If you plan to age the tea for more than a year, we recommend putting it in the fridge. An important note here! When you pull the tea out of the fridge please let it rest at room temperature for 24 hours prior to opening! Opening the bag before the inside temperature gets  equal to that of outside may cause condensation inside, creating small water drops on the bag’s inside, compromising the tea quality. 

Matcha
Matcha should be kept in the fridge till it is opened, and the same cautions about not opening as soon as you get it out of the fridge apply!
